Sausage balls

Has anyone ever made venison sausage balls? I found a couple of recipes for them and I plan to substitute venison mixed with pork sausage for the sausage it calls for. 

I'll post up some pics tomorrow when I get started. 

Here's a copy of the 2 recipes I've got. Any suggestions would be great.

let us know how they were.  I know those breakfast muffins you gave us the recipe for were excellent!  Esp after a morning in the woods.

If you havent made before - sausage stars are a great snack.  Bake wontons in a mini muffin pan for like 5 minutes and then fill with cooked sausage, cheese etc and bake for another 5 minutes.

I thought about smoking them. It would add a nice flavor.

How would they be without the hash browns? And do you dip them? If so, what di you use for a dip?

I think the hash browns help bind them and add texture. Never tried them without. 

I used BBQ sauce and blu cheese dressing for dips.  A tiger sauce would be great too.

What kind of sausage? Hot breakfast,  Italian?

Glad you liked them. Fun part is now tweeting the recipe to suit your taste. 

Sausage stuffer might work, but then you have to clean that. I wear rubber gloves and use a little flour to keep them from sticking so bad.  

I made some the other day with hot sausage and added diced jalapenos. Not too bad, but I think if I added the right rub to the outside, they might have been a little better.

You do a rub on the outside? Interesting!  I added some dried jalapeños to mine,  I like the extra kick.
