Moraknives are great.  I keep an extra one in each car, plus one in the boat too.

I like this one by virtue of it being very easy to grip when reaching up inside the vest cavity.

I call a knife as something one can sharpen.  A blade that is disposable is a razor.  

Below are a few of my favorites.  The two on top are made in Solingen Germany and are probably 50 plus years old.  They can hold an edge better than anything I've seen of more recent vintage.

The bottom two are a Schrade LB7 and a Kabar with rubber stacked grip.
