  2. Agreed ants. While I like the ease of baking them, they are a bit drier than I would have hoped. Can't wait to drown the remaining meatballs in tomato sauce and make meatball parm wedges

  4. Ok...I'm adding some garlic and a shake or two of crushed red pepper for heat. Pics will follow
  5. I am making these today so an last minute tips welcome. I have 1lb of ground venison mixed with 4oz of pancetta that I ground. Gonna add one egg, some seasoned bread crumb to combine and maybe some Parmesan cheese. After I sauté them, I'll let them simmer in some tomato sauce for a bit. Then, slice e'm up to put on homemade pizza. I think that's it. I'm going to keep it simple for my first run
  6. I just finished separating and deboning a doe I recently arrowed in Westchester. This is really my first time butchering my own deer. I have about 9 lbs of scrap meat that I plan on turning into ground meat. How careful do I need to be with these parts? Do I need to remove all/most the white sinewy bits and fat? I only ask because I have seen various videos where they take huge cuts of scrap and hold it up as meat to be ground with a lot of sinew and fat. Do they pick through that or just grind away? Also, what the hell is that thin slim over many of the roasts? That $hits nasty. Can it be removed easily? Does it need to be removed?

  8. I got some KOH, a fleshing knife and a "how to" braintan book...guess what i'm goona be trying now that the season is ending (still have 5 days left in Westchester for Bow).
  9. Overall I would call this a success! One Wellington was made with only a white button mushroom duxelle and one was made with the same duxelle plus pâté. I preferred the one with the pâté. It seemed to soften the mushroom duxelles a bit if that makes sense. We served it with a wild rice made with cranberry and hazelnuts along with Brussels sprouts that were blanched and than sautéed with pancetta. It was a bit of work but it could be done in stages. The day before I seared the meat and made the duxelle. Once each cooled, I covered the backstraps with the duxelle and wrapped tightly in Saran Wrap. Left in fridge overnight. By the way, needed much more duxelle than the recipe made. The only thing. Had t do Christmas Day was wrap in dough. For one though,I added a layer of the pâté. Definitely worth doing again.
  10. So on a previous post, I am pretty sure I wrote that I hang deer by the back leg to avoid the "noose look." Of course she broke her back leg, not allowing me to hang her upside down so by the neck it is. The head of the management program aged her to be 2 1/2...and guesstimated her to by 120lbs.
  11. I've been carrying a camera all season until my last three hunts. Started to think i was jinxing myself.
  12. I only waited an hour before I started looking around the initial shot sight. By the time my friend showed up it was closer to 90 minutes and I was ready to just back out since we were loosing light and saw no blood. He just happened to stumble on her following tracks and terrain. I was lucky she expired that quickly or else we would have been pushing her away. I swear she died of shock as a result of the broken leg and an arrow sticking out of her gut!

    Finally!

    This is my third bow season and I have yet to record my first harvest...UNTIL TODAY! I am hunting in Westchester with a deer management program. I climbed a tree in a new area to me but was loaded with sign. At 3:30 I hear voices talking and realize that hikers are out enjoying a nice winter day. Damn another spot burned is my first thought. But then about 15 minutes later I hear the crunch crunch crunch from my left and a doe shows up. She only needs two more steps and she's mine. But no, sharp left turn and all I see is rump walking to the hillside. Her companion is held up about 35 yards away and I see a closer spot for a shot. She walks right to it and I plant her. My shot is a bit far back but it's solid and I see my arrow sticking out. She buggies up the hill and makes a loop to join her friend. When they get together, she wipes out on a steep decline and hobbles off to the thicket...and vanishes. Now the anxiety starts..was it too far back? Why didn't she fall and stay down? Is it going to be too dark to track? My buddy showed up a 4:45 and we started looking for initial sign. No blood, no arrow. The only thing I have is the skid mark she left on the hill where she fell. There where some heavy tracks and we followed them to the thicket. Frustration started to kick in when I found ZERO blood. I was just about to call It and come bak tomorrow morning when my buddy says, "I found your arrow ... Sticking out of this deer!" She broke her back right leg, I presume on the fall, causing her to stay put just below the thickets where I last spotted her. I am still not 100% sure why she died so quickly with my shot a bit back with no pass through. Opinions welcome! Finally, my first deer with a bow after three seasons. What an unbelievable experience, not without help from a quality hunting partner who left his Christmas Eve prep to track and recover my deer. Thanks for reading this long tale with a Merry Christmas ending!
  14. Nice. Just be careful f the quality of battery. Never knew that there are different quality f batteries until I used the same flashlight as my buddy. We had different brands of lithium batteries and his light was kicking my lights a$$. I just thought lithium was lithium.
  15. Certainly words like semi automatic make no sense to a non hunter. They see no benefit to such a device since they have no basis for understanding how it is intended to be used appropriately. The knee jerk reaction does make it very difficult to have civil conversations about the actual issues that are plaguing our society.
  16. It goes without saying that teachers who hunt are rare. Since the tragic events in Newtown, discussions around the faculty room have focused primarily on stricter gun laws and gun bans, as well as some acknowledgement that mental health and over-prescribing meds to kids also contribute to this and other recent tragedies. I will readily admit that I am not a "gun nut." I hunt birds with a hand me down 12 gauge, borrow a slug gun for deer occasionally and bow hunt for deer. I personally own only two guns and two bows and they suffice for my hunting needs and budget (probably about 50 hunts a year of various types). The faculty that tolerate my hunting stories see no issue with the guns I have but wonder about the necessity of AR's in the hunting world. I do not have a valid answer as to why AR's can be and should be legal weapons except for 2nd ammendment. I really am hoping for some advice. I just re-read this and it feels like an anti-gun person writing it. Believe me, I'm a real hunter.
  17. Marinate in oil, salt pepper, crushed red pepper and fresh rosemary sprigs. Grill on a HOT wood fire. Cook to med rare at most. SMILE BROADLY cuz that is some good eats.
  18. My burgers...one graded onion(not chopped-grading makes t juicier). Add worsterchier sauce, salt, pepper, dash of garlic powder and red pepper flake. Grill. Top with darkly sautéed onions in butter on a potatoe roll. Topped with franks reshot and Heinz...NO CHEESE PLEASE. Sorry for no measurements. Just keep throwing crap in til it looks good. I like that they fall apart a bit...end up very moist and tender.
  19. Interesting Birdhunter. If i made individual ones I could make some with and some without the pâté. Any other tips for avoiding soggy crust besides searing meat first?
  20. Thanks...I found one on-line that sounded good which included pâté but some people are fighting me on that so I am need to stick with just the mushroom. Gonna give Early's find a shot bt may change from button mushrooms to something more exotic
  21. I'm looking to make a venison Wellington with a backstrap for Fhristmas. Anyone ever try it before? Successful recipe? What sides would you serve?
  22. What sucks is that Larry did everything right..shot deer on his prop, asked permission, offered to clean up, thanked him...and this is the mess. What about just calling local PD to ask their opinion prior to an official complaint/report. You need to get this documented though. I believe you, but everything is hearsay without proof. Are you new to the property? Is he new? First year hunting the land? Just curious
