Al Bundy
OH man. What a sucky story this is. I have a pretty good buddy at work and often times share my bounty with him. I made and gave him a bunch of snack sticks from venison. I ate some from the same batch, he ate one from the same batch a week or so ago. That afternoon I had the hershey squirts. It was either the sticks or something else I had for lunch. Next day I asked him if anything was off with him and he said no not at all. I chalked it up to my lunch that day and not the venison. But.. fast forward to Friday. I gave him 4 sticks Friday and he ate one Sat and half hour later started feeling like he needed to barf. It got worse and said his joints even began to ache. He never did barf, but had the horrible feeling like he was going to most of the weekend. He didnt have anything with large intestine issues though. Lasted about 24 hours then he was fine. He laid in bed most of Sunday. I feel like an ass, though its not clear it was the venison I still feel bad. Does not seem possible that one stick in a batch would be bad and the rest OK. Anyone ever have bad experience with any kind of bad venison?? If so what were your symptoms.
jjb4900
how old was it, how was it cured and how was it stored? you can get food poisoning from any type of food if any of those things are off.....I doubt it was bad prior to making it or it probably all would have been bad. Al Bundy
I used a cure from the mix I bought, per instructions. Cooked in the oven according to mix directions. Frozen for A couple of weeks, brought to work and stuck in the fridge for something like 3 days.
Culvercreek hunt club
When making it were you able to confirm, by a thermometer use, the internal temp of the sausage was reached?
Al Bundy
Did not test internal temps. Not sure it was on the mix directions but even if so, answer is no, did not. Guess I better have a read on that.

Culvercreek hunt club
I like to take any type of ground venison in sausages up to 160. (the suggested temp for ground beef to avoid all those nasties.)

HectorBuckBuster
Like B3H there is a nasty bug, starts out will a belly ache, then you pretty much are guessing which end to put on the toilet. It put me down for over a day in bed, could not even keep water down. Then it felt like you had a huge boulder sitting in your stomach for days, and you could slowly eat and drink again. It took 4-5 days to get back to normal
132 eight pointer
Like b3h posted there are so many 24 hr bugs going around I think it is hard to say it was food poisoning although it is possible. I had a 12 hr. joints aching, head throbbing illness a few weeks ago.Stomach was fine though. Some people are affected by nitrates/nitrites in cured meats not sure if that would cause stomach problems though It can cause irregularity (keepin it clean here).
