I guess I would have to see his work before I passed judgement... A clever butcher might cut some very nice "cutlets" form areas of the deer that are normally ground, or cut into roasts.. There are however, certain parts of the deer that would be good either ground or roasted ... Neck meat and shanks come to mind, as well as parts of the front quarters.. I have a hard time imagining some of these cuts as "cutlets".

I am aware of couple of confirmed kills here in southern Steuben County in the last couple of years. However, both of them were big, hairy Russian types which were probably escapees from the Tioga Boar Farm, a hunting preserve about 30 miles south of here..

I've cut meat and been around meat cutters all my life and never heard of such a term... I HAVE heard the term "bone sour" usually referring to large portions of meat such as elk or moose hindquarters, or possibly even deer, that are not cooled properly and spoil from the inside ( bone) to the outside... Out west when dealing with elk quarters that have been kept in questionable conditions, I have heard of butchers opening a hind quarter to the bone and smelling it for "bone sour"...

There was a good example of this here in Steuben County a couple of years ago... A man knocks on the door of an elderly couple's house... Not knowing who it is, they do not respond.. A few minutes later, the guy breaks a bathroom window at the rear of the house and enters... The old gent ( in his 80s) confronts the intruder with a Walther ( which is legal and registered).... The guy advances on the homeowner.. The old gent drills him... The guy sits on the floor bleeding, while the homeowner calls 911... Unfortunately, the dirtbag survives... Fortunately, the shooting is declared justified right from the get go, and the intruder is convicted of breaking and entering PLUS a number of other burglaries and is currently cooling his heels in state prison for a substantial period of time. Hopefully, he is currently sharing a cell with some big, oversexed cellmate named TYRONE...

Jerry..I remember reading about that in the paper.. As long as the stag was on the owner's land, the animal was considered his property. As soon as it escaped from his land, it was considered an unprotected non native species, just as an escaped wild boar would be, and it was fair game.

Captain Frank Hamer used a M8 in the shootout with Bonnie & Clyde. Allegedly, he shot both of them through the windshield, and then the car lurched ahead and was subsequently riddled by the other lawmen present. Can't remember whether Hamer's rifle it was a .30 or a .35 .

Steve..I'm not sure where you got the info about the .35 Rem, but I do know that the .35 Rem has been around since the early 1900s and the State of Israel has only existed since 1948. I just checked it out. The .35 Rem was introduced in 1906 and was first chambered in Remington's semi-auto Model 8 in 1908. It was also eventually chambered in thier Model 14 and later Model 141 pump guns. Marlin first chambered thier M336 in .35 rem in 1950.

The Beaverkill and Willowemoc flow along Rt 17 and both are legendary trout streams.. There are also many other good streams in that area, and they often aren't crowded. The Delaware is also a great fishery with lots of big browns and rainbows, but let me warn you, those trout are VERY selective and hard to catch. Fishing there can be a humbling experience.

Trajectory charts are just a general guide...They are usually close, but the only way you'll really know where your rilfe is shooting at 100, 200, 300 yards or whatever, is to spend some trigger time at those distances with your specific rifle and loads. Good luck and have fun.. -
Welcome to flyfishing Burmjohn...!!... It can be as simple or as complicated as you make it. A double tapered line, a tapered leader and a few flies can catch you a lot of fish, and you don't have to be Lee Wullf to catch fish.. Trout fishing is great, but you can also have a ball catching bass, bluegills and many other species.. Flyfishermen tend to very generous with info..Hopefully you can find somebody local to give you a few basic casting lessons and tips, and you'll be prepared to catch some fish. It can become a passion very easily... Have fun...

I'd be glad to help however I can. I went on my first "big time" out of state hunt in '89 ( Alaska float hunt for moose and caribou) and over the next 20 years I was fortunate to make a number of other hunts across the western US and Canada. Now for reasons both physical and financial, I am no longer able to do the hunts to the extent I did back then, although I ain't dead YET, and may have a hunt or two left in me. I will gladly share any info on the hunts that I was fortunate enough to do. Lawdwaz suggestion of a pronghorn/mulie hunt is a good start. It can still be done without hitting the lottery, as long as you understand that you will be mainly hunting representative animals, not the monsters that they show on the TV hunting shows... That tends to cost a lot more $$$$..

The fellow whos kills the big bucks in Steuben hunts from a treestand mostly, and my friend from Florida who kills gobblers yearly hunts them from a custom, portable blind, so you are imposing more limitations on yourself than they are.. Not exactly apples and oranges. The degree of difficulty is more for you than for them, no doubt. But that's a great thing about this sport... It is a personal thing..You can impose as much challenge as you want. I'm currently at the level where I just like to spend some enjoyable time in the woods and hopefully kill a deer or two for the freezer.

You shoot 50-100 slugs a year out of a fixed breech shotgun..??.. Dang...!!.. You must be as recoil proof as a tractor tire.. I say that with admiration, not sarcasm, my friend... A couple of my aquaintances shoot deer with a 416 remington and a .458 Win mag, just because they enjoy shooting the big guns. Nothing wrong with that, as long as you enjoy it and can shoot well with such big boomers. As por MOI, I am a sissy and much prefer the recoil of something like a 7mm08 rather than something that crosses my eyes whenever I squeeze the trigger. Different strokes for different folks.. My hat is off to you.

You nailed it there, Joe.... A couple of the deadliest bowhunters I know are trad bow shooters.... One of them kills BIG bucks nearly annually with his recurve..I'm talking bucks that would knock your dick stiff...130s minimum. This is in Steuben County NY, not Iowa or Ohio. The other guy also kills bucks annually with his recurve and also kills 3 or 4 gobblers per year with it. They both practice religiously and seldom take shots over 20 yards.

A big buck did exactly the same thing here in Gang Mills off the I 86 overpass this fall.. Fortunately, he did not injure anyone, because he bounced off the highway underneath where he jumped off. The buck did not survive. A few years ago, a friend of mine who works at Polly-O Dairy in Campbell, was on his way to work before daylight one morning. A buck ran down the road in front of him as he was crossing a bridge over the Cohocton River, and the deer jumped off the bridge in about the middle of the river. Never knew if it survived or not, but it had about a 30 foot drop and the water is only 2 or 3 feet deep under the bridge.
