Hey Culver, my guess is it was hung by its head? I'm not really sure. I didn't do the butchering this time. We actually let out a whole lot of blood prior to quartering. More so than previous deer. We find it easier to hand by the head for some reason. I actually think the ribs and neck is pretty damn tasty. Could be because there's never any blood left there! With that said, I think its a matter of how its cooked. I've had some EXCELLENT venison medallions on the grill before, but I wasn't the chef.
