Grilling Venison at Work

co-worker brought an old grill into work that we're now keeping out back. brought in a 1/3 of a back strap. grilled it up whole to medium rare. it got picked off crazy quick just getting back to my desk. had just enough to feed me at lunch. lol meant to take pictures but it didn't happen. another section of strap thawing in fridge for tomorrow.

up the hill a bit from Cuomo's office in Albany and then go a little further. lol  public hunting across the parking lot, but it's albany so bow only. no crossbow either at any point in the season. they must look too much like a gun.

Literally the last two packs came out of the freezer yesterday at my house. I still have three steaks left, a lot of ground (going to make a huge chilli soon), and a bunch of costanza sausages.

it's easy bury it in a chest freezer with over 100 lbs of other cuts. lol  i think these two were the last left. roasts and ground remain despite we go through a lot. then add stuff from garden. mixed in with that. chest freezer works but is chaos. i pack stuff in cardboard boxes or stack flattened vac sealed portions of ground to keep things separated.

I happen to work in a place where we are often called to remove roadkill. 

In the colder months, if said roadkill happens to be very fresh (like warm and no rigor), it seems like the backstraps always come up missing. They tend to reappear on the grill back at the shop.
