I’m not sure why we are all using fancy oils?

As a chef I will tell you good old canola is fine. You shouldn’t be using enough oil that the health benefits even matter. If you are the food will be very greasy

I would yes. Rust would be very annoying. You would have to sand it off and start over

I use a soft cover over mine and it has a hood. FYI don't cook for extended amounts of time with hood down. High heat may warp the lid. Use a metal bowl or something to cover foods for a cheese melt. I have a bowl like thing with a handle

Dont go to the rib fest there , or at night …

There’s been a few violent incidents there this year, a women was held up at gun point in the lot a few nights ago . A deadly beating there in May .
