jbone
Great read. However I would disagree with the last one being too fancy. I work at a country club and have tried some really cool recipes. Home made teriyaki sauce wrapped in bacon, brandy au poivre cream sauce etc....
Hock3y24
I've never had bad tasting venison unless overcooked!
Lawdwaz
I've always said; If you're grilling it must be hot and fast, NOT slow and low. I've seen butcher shops with stacks of deer laying on the floor, waiting to be processed. Never liked that or the "community grind" Screw that, MY DEER/MY GROUND.

Totally agree..that's why If I can help it I won't use a deer processor. But i do understand that some people have to use one.
TreeGuy
If I wanted to guess on what / who's meat I'm eating, I'd go to general tee-so's and get dinner !! Thankful my pops does the butcherin. Takes him 2 days since he makes sure to get all silver skin, sinue and other crap off the meat. And for what it's worth, the best tenderloins I ever had were from a nursing doe who I gut shot and recovered 24hrs later Edited October 26, 2014 by TreeGuy

Uncle Nicky
#13. Venison isn't beef, or veal, or lamb, even though it resembles each in some ways. It's deer meat, and if you don't like deer meat, that's just how it is.

Fantail
I usually use ground pork / pan sausage for burger mix but might have to try the idea of adding ground bacon one day.
