I can usually stay between 125-150 with the vertical charbroil and I throw in pecan chips for the first few hours. After about 8 hours, they recommend a bump of temp to 170 until internal temp of 156 is achieved. I put them on yesterday about 10:30am and went about my day (rotating them when I remembered and keeping the tray full of water(keeps temp down).
