Thanks for the ideas guys, Im gonna have to try them. Steve, the wine idea sounds great. I have a couple of venison recipes that I use red wine in, it works perfectly with venison. Even more so than beef I think.

2 eggs 3/4 cup of milk 4 slices of bread 1/2 cup chopped onion 1/2 cup chopped celery 1/2 cup chopped mushrooms 2 Tbsp flaked parsley 2 tsp sage 1 tsp black pepper 2 tsp salt 8 - 10 dashes hot sauce 2 Lbs ground venison Mix eggs and milk in a bowl. Pull bread slices into pieces, add into bowl. Mix in onions, celery, mushrooms, parsley, sage, pepper and salt. Mix in venison and add hot sauce. Press mixture into caserole dish. Bake uncovered in oven for 1 1/2 hours. Mix together 1/4 cup Ketchup, 2 Tbsp brown sugar and 1 Tbsp yellow mustard. Remove meatloaf from oven and spread sauce over top of the meatloaf. Bake in oven for 20 - 30 mins.

Ingredients: 4 cups white or brown rice 1 1/2 lb venison steaks cut into cubes and seasoned 4 tbsp Worcestershire sauce 1 can drained corn 1/2 cup onions, chopped 1/2 cup red or green bell peppers, chopped 1 can drained kidney beans 1 can diced tomatoes (not drained) - Cook white or brown rice as directed. - Season Venison cubes with Wild Game Seasoning (or however you generally like to spice your steaks) - Fry venison and Worcestershire on medium heat in a large frying pan until venison is cooked to your liking. - Leave all juices in the pan and add rice, corn, onion, bell peppers, kidney beans, and tomatoes (with juice). - Cook on medium heat, for about 15 minutes or until the rice starts to brown a bit and the beans soften up. Stirring to prevent burning. - Serve with a bit of hot sauce and salsa on top

Ingredients * 1 (2 pound) venison backstrap, cut into 1/4 inch thick slices * 2 cups milk * 2 tablespoons hot pepper sauce * 2 eggs * 1/2 cup milk * 3 cups all-purpose flour * 2 tablespoons seasoned salt * 1 tablespoon ground black pepper * 3 cups vegetable oil for frying DIRECTIONS 1. Place the venison slices into a shallow bowl and pour in the milk and hot sauce. Stir to coat, then cover and marinate for 1 hour. 2. Heat the vegetable oil in an electric skillet to 325 degrees F (165 degrees C). In a shallow bowl, whisk together the eggs and milk. In a separate bowl, stir together the flour, salt and pepper. 3. Dip the venison slices into the flour, then into the egg and milk, then back into the flour. Shake off excess flour. Fry in the hot oil until lightly browned on each side, about 3 minutes. Remove with tongs and drain briefly on paper towels before serving.

INGREDIENTS -2 cups buttery mashed potatoes -1 pound lean ground venison (or other big game) -1 tablespoon canola oil -1 red onion, chopped -2 cloves garlic, minced -2 stalks celery, diced -1/2 cup diced red bell pepper -1 tablespoon Worcestershire sauce -1/2 teaspoon salt -1/4 teaspoon pepper -2 eggs, beaten -1 cup cottage cheese -2 tomatoes, sliced -1 cup shredded Colby Jack or Cheddar cheese DIRECTIONS 1. Preheat oven to 350 degrees F 2. Spread mashed potatoes evenly in a 2-quart casserole dish; set aside. Brown the venison in a large skillet over medium-high heat until crumbly and no longer pink, set aside 3. Heat the canola oil in the skillet, then stir in the red onion, garlic, celery, and red bell pepper. Cook until the onion has softened, about 3 minutes. Stir in cooked venison, and season with Worcestershire, salt, and pepper. Spoon mixture onto potatoes in the casserole dish 4. Stir together eggs and cottage cheese in a small bowl; spread evenly over meat mixture. Top with tomato slices, and sprinkle with cheese 5. Bake, uncovered, in preheated oven until set, about 20 minutes

Yes, that works great with venison. Ive made that very thing with strips of steak, cut almost as thin as you would for jerky.

I have some good jerky recipes, Ill try to remember to post a couple of them up tonight. I always do mine with roasts or steaks sliced thin, never tried the ground method.

I am really starting to believe it doesn't matter....just two seperate branches of the same corrupt tree......I wan't to see some new blood in office Wasnt he touting himself as some of that new blood? The sense of power always seems to corrupt them. You are right about it not mattering what side of the fence they are on, most are in it for the career aspect rather than doing the right thing for their constituants. -
My office looks out into a portion of Kodak Park.....Every day I get to see what is running around in there :'( :'( :'( Not sure I would eat anything out of there but there are some of the biggest bucks I have seen in my life in there My office is right down the road from yours, I go by there all the time wondering whats running around in there.

It goes both ways arrow, why is it that you or NYB should force your opinions on everyone and say who "needs" a crossbow and who doesnt? The dishonesty comes from your side of things constantly. For instance, who is saying crossbows and compounds are identical? Sure they are different, just not different enough to not be in the same season. That is what people are saying, but you try and twist it into something it isnt. You are just about one of the most perfect examples of why I, and many other bowhunters, are against x guns. You are practically their poster boy. You have no sense of honesty, or decency. You are poorly educated.
