i wonder if it's farm raised whitetail and not really redstag?  I've heard most commercial venison is redstag for some reason.

It is because they are easier to deal with and one animal grows larger and therefore produces more meat at a lower cost.... same reason you are now seeing huge chicken breasts at the store
