Many years ago (20+?) I shot a buck early in the archery season and it was very warm. I had a good relationship with a local "good size" butcher. He would grind all my venison for a few bucks (dollars!) each year after I whacked & stacked. I called him and asked if he would let me hang my buck with him for a week before I butchered it. He said sure, no problem. I dropped it off and he said he'd hang it and I could come back when I wanted to cut it up. Well, when I did go back 7 days later it was siting at the bottom of a pile of other deer that had been stacked on top of it in the cooler, That pretty much finished off that relationship.

Lots of game is shot each year in climates much less conducive to keeping meat from spoiling. Think of the animals shot in Africa! The folks down in Texas, South Carolina, Alabama etc. aren't bitching too much about spoiled deer. Hey Doc.....most butcher shops are not as big as the shop your referring to with a large staff etc.

Do you guys think a butcher cuts YOUR deer first? Depending on the lineup, YOUR fine deer might lay at the bottom of the pile for a few days, easy. They certainly don't have the room to hang 'em up like in the movies. Lots of good ways to manage your processing. Butcher it within hours or wait 10-14 days. Temperature and humidity are the deciding factors. I'm absolutely & certainly no expert on aging meat but if your interested, reading up on it could be enlightening. Read up on wet aging & dry aging. You know, 100's of years ago in Europe they would age birds by hanging them by the neck, with the guts in them. They were "ready" for human consumption when the body dropped away from the neck. Mmmmmmm good!!

After finding my archery buck at the end of a 75-100 yard blood trail, I stumbled into the buck pictured below. He was only 15 yards from my buck and appeared to be dead only a few hours?? No obvious signs of his demise. Hit by car? .22 in the belly? punctured vitals from getting pushed around by another buck? Hell if I know..... I've found enough other dead deer over the years but most showed a cause of death (arrow, bullet or car) that was pretty easy to pick out.

Well, looks like I fell short of one of my goals for this season. I only hunted two times in Wyoming County this year. The first was the first Saturday and that was a bust. The second time was last night. I saw 5 deer from the stand including two bucks but just couldn't get the shot. The sun was giving me fits on the first buck. He was chasing a couple doe around and I was facing south with the sun blasting me at 3:00pm. Distance was about 125 yards. The second one (could have been the first one) was chasing below me to the east around 4:10pm. He was just being a goofy 1.5yr old looking for a piece of tail and just ramming around. If he only would have stood still for a second...... I would have taken a doe if the opportunity would have presented itself but that didn't materialize either. The anticipation of finally getting to use a rifle in my neck of the NYS woods was really something for me. I enjoy carrying them, having the potential for much greater accuracy and hunting with my handloads. Boy did I look forward to it! This weekend I'll be hunting with family and friends back in Honeoye with the ML and maybe the XP 100R. I'm going to do things different next year, Pennsylvania could be off the list. That would free up more time for Wyoming County. We'll see. How you other Wyoming County hunters do?

I was just thinking.......IIRC, the first time I used saboted slugs, was 1985 or 1986. They were the original BRI loads in red hulls. I haven't used the shotgun at all in the past 4 or 5 years because I enjoy using the ML more. 20 years with many types of sabots and many deer killed with them. Funny, I've been using saboted bullets in the muzzleloader since about 2001. I like sabots!!

You have absolutely nothing to fear with sabot slugs. I guarantee you anybody that had a problem with them had poor shot placement. A 375 H&H or 458 Win Mag in the brisket, paunch or leg won't be any better than any big fat punkin' ball.

Give Benelli a call. I'd think they would help you with it. I have a couple Benelli's, a SBE and a 20 ga Montefeltro. Had them both for about 11 years and couldn't be happier with them. Amazingly simple and well made guns.
