Yes any dried/boxed pasta would be good with me at home but even the plating is a mess.Some can cook and to some plate it and forget it.A little reduction or a little corn starch atleast

Yea, most cheap grated cheese has modified food starch in it, so even some cheap cheese would have thickened that sauce lol

Could be not enough cheese to cream.For myself if I'm out paying for a Dinner like that if it came to my table like that it would have been sent back.

All Good Parmesan is 1 of the main ingredients of the dish could be why the sauce was thin not enough cooking time also.

It's a little too long of a bike ride for me now or I'd meet you there. There was a salumeria next to Eastchester fish gourmet that was killer too. Again that was 30 years ago so Lord knows if it is still there.

Lol, my dad, and I cooked/prepped this, I thought the pan I was frying up with the chicken/onions/peppers was for all 3 of us, lol.  I started to build my quesadilla, and he says load it up! I said we need to save enough for you! He tells me he cut that all up for jen, and I! Haha thats my dad, so that was my quesadilla enough for 2 separate quesadillas
