    I have the Cabela’s Carnivore 3/4hp. Thinking this is the third year I’ve been using it. It’s also a Beast at 40+ pounds; it stays in the basement and I bring the meat to IT.

    That's funny but in a respectful way. I'd put your version up against any store bought machine. You've garnered enough intel from visiting the people that rely on this type of thing. You might not be into drying it in the open atmosphere like them but your version is probably great.

    Amazing a fellow can tell a 3.5 year old from a 4.5 year old on the hoof. Heck, biologists have a hard time looking at lower jaws. Good on you for passing a 3.5 year old, not many would if they knew he was that age. Hopefully your camera gets some pics of him, love to see him.
