saw this on the meatgistics page of waltons. It says if using venison use a ratio of 18lbs of venison to 7lbs of fat. And thats straight fat not just ground pork. Which makes sense that if the ground pork is 80/20 or 70/30 its not enough to cover the lean of the venison. So if adding ground pork you will still need to add extra fat for the right consistancy for sausage. We went right at first light as we were expecting with a strong west wind all day yesterday the fish to be stacked up. First hour and a half we realized that wasn't the case. Super slow. Figured this could be one of the last cool days like this and the lake is a wave mess. So went out to the land with Corey and we got a new stand up. 9ft on the field edge that we hope to plant this summer. Stand went up easy once we got it going. First stand we took out must've gotten water in it and.froze over the winter and it was split. So had to trade out for another. But it's in and looking forward to some hunts here. Also I got another stand in a spot and trail cleaned out but stopped cause the tree was covered in ivy and I'm just getting over it from last time. Fishing tomorrow! Ny you dont see many large expanses of thousands of acres too. Most guys have their little areas to hunt where out west its often much larger blocks. Hard to buy 2000 acres here in NY and say your gonna be a hunting outfitter instead of buying that much for a building investment. And how many out of state hunters would even consider going to NY as a hunting destination? Most people think we all live in NYC anyway. lol

i think you have to factor in the adirondacks to our NY equation. The western, southern areas of the state produce a lot and some awesome bucks. Go north to the large adirondack park and the numbers are just dismal due to habitat. Its like two completely different areas but all get lumped into one for NY. I dont think a lot of states have such a big descrepency like this. Would be interesting to just compare NY without the Dacks and see how it stacks up (referring to deer take rather than hunters PSM)
