Speaking of it i'm going to do a couple of pork butts today in the smoker. A gentle west/southwest should tell me all I know when dinner time approaches. Smoke for about 3-4 hours, oven at 225 for a few more and crockpot on low. No pulling it apart and getting cramped fingers. Most tender pork I've ever had. One Eyed Jacks near Johnson's outdoor is pretty good too for BBQ. No cornbread though. What's up with that ? And craptastic beer selection That is kind of how I do my pork butts, I smoke them for 6 hours to get a good bark,then I placed them in my electric roaster set at 220*. Been in there for 14 hours and still stuck at 168*. I am thinking of putting them in the regular oven for a while as the electric roaster should have finished them by now.? This is the first time trying the electric roaster, usually I put them in the reg. oven but I thought I would try the roaster so I don't have to leave the oven on all night. Some frozen rice thingy and of course Webers mustard to dip sausage in.
