Birdhunter Posted January 29, 2012 Share Posted January 29, 2012 Shared with my family my first venture into making sausage: First was venison with garlic, capers and ground anise seeds Second was pheasant, dried cranberries, chestnuts and sage Also had roasted potatoes and lemon-garlic string beans to go with it. Doc Posted January 30, 2012 Share Posted January 30, 2012 Left over roast venison chopped up in gobs of gravy over a huge bun last night with some mashed potatoes and some butternut squash on the side. Pretty good stuff. We've still got enough left out of that roast to have some shaved venison sandwiches with peppers and onions...... maybe even tonight. That's 3 meals out of one roast. That was LAST night. Today I'm going to make some mixed venison meatballs, half moose burger and half deer burger. I cheat on my sauce..I use a jar of prepared sauce as a base and then doctor it with more garlic and herbs... I'll serve it over angel hair pasta.
