Yes, especially after sitting for 15 or so minutes. Perfectly done. I had planned to stuff some bacon fat into it as well but completely forgot. I actually am glad I did not do that. And by the way, I used a thermometer with an alarm on it to tell me exactly when it hit 125. I got it at Wegmans for under $20.

Hank Shaw has never let me down... https://honest-food.net/wild-game/venison-recipes/large-roasts/ I did a venison roast for our early thanksgiving last week - tie it up and then pierced the meat about 15 times with a small sharp knife, inserted sliced garlic and a few leaves of rosemary into each one, coated it lightly with olive oil, then ground pepper and sea salt, roasted in the oven at 350 until it reach 125 degrees, let it rest 15 minutes and it was FANTASTIC.

Update on this deer. It was shot by my neighbor on opening day (on a 3 acre plot I own and I allow him to hunt on). We had bumped him when walking in at 6:25 am, and again around 11:00 am. He was shot around 4 pm from 20 feet. 6 points, 18.5" spread. I also have a long distance picture of him mating with his doe 3 days before opening day. I'm trying hard to be happy for him! Not there yet....

12 ga. Remington 870, left hand model! I do have a Savage 220 20ga too, but when sighting in last week it was all over the paper, so I am counting on the very first gun I ever bought. I am in shotgun territory, but I don’t even own a rifle - unless you count a .22LR...

These are the only details i know, but it sure sounds like a case of “Oh, never mind.” Town of Keene -- Essex County "DEC Dispatch received a call on Nov. 5 at 10:57 a.m., from In-Reach Services, a GPS location company, reporting a 23-year-old man from Ballston Spa in need of assistance on Algonquin Peak. The subject was concerned about the icy and windy conditions on the south side of the peak. Cell-phone contact was made with the hiker and he was advised by Forest Rangers to continue downhill toward Lake Colden and meet up with the Lake Colden caretakers, who were en route to meet him. Upon reaching the summit of Algonquin, the caretakers couldn't locate the hiker. Four Forest Rangers were dispatched to the Adirondack Loj, and Essex County 911 placed the hiker on the north side of the peak, about .3-miles off the trail to the west. Phone communications between the hiker and Forest Rangers directed the subject to continue east to intersect the trail. Forest Rangers proceeded toward his location. At 4:15 p.m., the hiker contacted Ray Brook Dispatch and confirmed he was on the trail at the Wright Peak intersection and would be continuing out to the trailhead. It was confirmed he needed no more assistance and Forest Rangers cleared the scene shortly thereafter."

Some recent card pulls..... I don't have any pictures of the larger bucks that were roaming the area earlier this summer. I do have 3 or 4 smaller bucks still around, but I expect that all to be upside down in the next couple of weeks. I have a video of this guy rubbing the small tree in front of him. This is the wide rack buck that I have several pictures of. He is on my hit list for sure! Zoomed in and edited shot of this poor guy. Not sure what happened to him, but he is now "Mr Ugly". My hot corner with no stand (at this point). The branch above is a licking branch with scrape underneath. Several bucks and does visit it regularly. Hoping a larger boy comes nearby soon. I also have a nice big fat doe roaming around and a doe tag to punch. I am eating up or giving away all my venison. I want an empty freezer to motivate me to fill it!

Glad to see so many other Sicilians here! My grandmother would sometimes put a peeled potato in her sauce to tone down the acid. Sugar? Never. Carrots? Maybe sometimes, definitely in a Bolognese sauce. Our sauce has been made the same way in our family for over 100 years. No onions, no oregano. Basil? Yes. Homemade meatballs, pork ribs, sausage sautéed in garlic, then added to 3 jars of puréed tomatoes, salt, pepper, red pepper flakes, big glug of red wine, and that’s it. We can tomatoes too, we love the San Marzanos, but they just are not able to ripen 100% in upstate NY. My cousin grows them on our farm and sells to a lot of grocery stores and at farmers markets. We end up cutting out a good portion of it just to get the ripe parts. This year, we canned 96 quarts. My mother used to do over 200. Anyways, if the carrots work for you, great. Try a potato next time though. My wife, who is part Irish, says that is her favorite part of the meal.

Is it a vine or is it upright? If it was upright, the stalk and leaves look like Japanese Knotweed, an invasive plant. I spray it with weed killer several times a year, or it will completely take over an entire area. I did download an app on my phone that will identify it with just a snapshot of the plant.

Yes, paying for the meal is a point of contention right now. My friend insists on paying for our meal. It’s also my wife’s birthday, so i want to pay. It’s going to be a little game we play when the check comes.

I will take all the geese you want to give away, my buddy makes pastami that is out of this world! i had some bear meat given to me, i used it in a chili recipe and it was very good, even better than the venison.

My wife and I and another couple are going to the Tim McGraw Faith Hill concert in Buffalo next week. (Well, I am going to look at Faith Hill...). The other couple is from Buffalo and I asked I’m about the Yelling Goat, he said he had never heard of it. He texted me tonight and told me he made a reservation for us before the concert. Based on the pictures and descriptions from everyone here, (especially TurkeyFeathers) I am looking forward to it!
