Black bean tamale pie 1 package of cornbread muffin mix 1/4 cup milk 1 egg 2 cups shredded cheddar ( divided) 1/2 pound ground venison 1/2 white onion, chopped 1/2 green bell pepper, chopped 1 can black beans, drained and rinsed 1 cup picante sauce Spray bottom of 8 inch glass square baking dish. Mix muffin mix with milk, egg , and 1 cup cheddar in a bowl. Press into bottom of dish. Brown venison with onions and peppers. Drain any liquid . Mix with picante sauce and beans. Spoon on top of cornbread mix. I think I bake 350 for maybe about 1/2 hour. Then top with rest of cheese and bake until melted. Serve with extra picante sauce and sour cream.
