Leeks / ramps

Have a friend who wanted so leeks. I guess they are hard to find for him.. took him to my little leek patch.about 30 acres of them.. smells so strong I almost get nauseous... he got a bag full in about 5 shovel full..

Is now the time to harvest?  I just found some at my house but I'm a little concerned on the proper time to harvest.

Just poking through here. Cold and wet coming mid week on is going to slow things down.

My buddy basically lives on the other side of the expressway from you Gman ,the top of his hill is the same way ,just loaded as far as you can see.

The earlier you pick them the "hotter" they are as the bulb grows they become milder. Now to may is fine imo as I dont like them to hot, my neighbor digs them in February I can smell him digging them 1/2  mile away

Mine are just up enough to know they are coming along. I usually get mine in turkey season. This year I believe they will have to be dug at least a week earlier. My area is like yours G-Man, tons of them.

In believe those are actual wild onion!  Leeks have a broader leaf.. 

You are correct those are some big wild onions though

I found a few patches of them .. going back in the next few days to harvest some.  Can you freeze the wild leeks for later use?

Them ramps go good on just about everything! Wife's grandfather just made me some Ramps seasoning after dehydrating them.. They are perfect for Spring time cookouts.

No fiddleheads but these will go nicely on some homemade pizza tonight and Into a pesto for Easter Sunday pork roast

I checked my patch and found some for tomorrow's dinner.
I am definitely going to try the ramp pasta, maybe with burnt butter sauce.

They are a fiddle head yes but not the one you want to eat, you want to eat the ostrich fern, the stem will not be round but instead have a sort of v in it

But are they too far grown? Do you pick the leaves off or are they to get picked before those leaves grow?

Riverdale, Bronx.  From them near the Hudson.  A really small patch off of a road.  They look past the point of being edible.
