  1. It'll get better after it sits and the spices blend more..... Just be careful if testing fresh and adding heat like crushed red pepper flakes. I made a batch when I first started and kept adding more than called for cause the sample didn't seem all that hot. After freezing/thawing then cooking.....WOW, that was some spicey sausage. My favorite is a fresh brat recipe with venison, pork, and veal.....I usually raise a dairy calf and pig most years just to grind.
  2. For 10lbs; 4 TB salt 1 Tb ground peper 2 Tb sage 1 tsp ginger 1 Tb nutmeg 1 Tb thyme optional is 1 Tb hot pepper 2 cups ice water. I mix everything in the water and then add to the meat. You need to add pork fat to the lean deer meat, some fatty shoulder works good.

Tried to negotiate on a 375 bolt gun that wouldn't feed. It was still there 2 years later.
  5. You are going to pay for quality equiptment that is lightweight; it's worth every penny. Buying once will be cheaper in the long run....ounces count when everything is on your back. Learn how to field dress and dismember an animal for transport in the field. You can do this! eVent bivy. Good sleeping bag/pad Tarp.

  7. Nice Elk, Larry. I've hunted 7-9000 a few times........never even noticed it; including just some hiking. But even with that, higher could effect me; guess you don't know til' you get there for elevation. I don't hear much even for us sea level folks like the OP stated for under 6k or so (unless there are some underlying health issues).......otherwise there would be a pile of bodies on Mt Washington; and folks walk up that in flip flops. LOL

  10. I tried out a loaner 1-4x24 with the amber triangle style reticle on a heavy kicker. Nice piece of glass. If given the right application for me; I would buy one. I ended up with an Aimpoint for a smaller package for what I wanted long term (pocket sized back-up; or low light, short range primary) I would like to see one of their crosshair reticles in some real world situations comparing to some of the glass I own.
  11. Don't look past the fact the trophy hunts often pay for the conservation of species in a larger context. In most places of this world.........If it pays; it stays.
  12. Just when I think I have heard it all about the rules "down there" ; I see another one. You can put me in the "what a useless law" category. And my ammo dump dwarfs 6000 rounds a few times over. I have been to folks places where they can't shoot because they have no ammo, not even a box of something.........that's not a problem here.
  13. Leupold has a rebate starting for the 40 and 50 diameters in that vx III scope.........$80 IRRC. Nice looking rig, even with the bolt handle on the wrong side........Good luck with it.
  14. Model? 75? 85? Other? Crunched some deer sized game with 120gr A-frames. Hit hard and can mash some bone from any angle. Just sayin'. Traded my 25-06 barrel for a scope mount and spare bolt......maybe I need another;<)
  15. This is great advice. I've always used a Nikon for spares on trips; usually they end up with guide/PH if they want them as part of their tip. YMMV

  17. Nothing for nothing Scot; but just over the bridge here in Dutchess, I have a full conceal carry with out a spot of training. (unlike Ulster where you have to take a class) And that's ALL they give out there are never any restrictions here. The laws and restrictions vary all over the country by state and counties.

    I'm there now....shoot a doe most years when I feel like it, land I'm on is slim for big deer and thats all I'm interested in......have freezers full of beef and pork, so the meat thing doesn't really matter to me, just adds variety. If I had drawn the bull Elk tag I wanted......I was not bothering this year. I am talking to a guy about a landowner Elk cow tag now.......that gets interesting as its late; Dec or early Jan. If it was during or before our season....I'd blow our NY season off this year. Right now, I guess I'm buying NY tags.

    Hmmm.....that gets interesting. For where I have to hunt and what I've seen......there wouldn't be a whole lot of shooting to do. Maybe; and thats a big maybe; you'd get a shot opportunity in some years.....

  22. Merkels nice.....sometimes that German animal engraving looks cartoonish. Like the splinter forearm too, that was an option; they usually have that big fatty beavertail that looks like crap.I would need a decelerator pad fitted. LOL You post it on AR? May find a buyer there; popular caliber and maker. I stored a 9.3x74 double for a military guy when deployed on reserves. That was Merkel; but built on a shotgun frame but not factory.A joy to shoot and fit me well; I have a standing offer to buy it if he sells and closer to my pay scale in price. I had a Ruger 458Lott...beast of a gun at 11 lbs,ported barrel...but when on a hunt switched off and shot with someone elses 458. So technically I shot and killed with one, but really not mine. I sold it anyway to buy a 9mm when I got a handgun permit.
