  3. hey guys oh and ladies, went to bjs [im starting to hate them they never have anything and have a dont care attitude e-mailed corporate a few times] I bought a small salmon filet cause case in point thats all they had ,to smoke it came out very good and of course im learning so i look at anything i do as a success . The salmon like isaid came out good but next time i use a brine instead of a dry rub with salt and sugar and i need to watch the temp/ time use the probe .What happened i set the time as per a site i goggled .It said 200 deg @ 3 hrs internal temp of 140 degs . When i went to check it after 2 1/2 hrs the probe on the unit said 173 deg .I was afraid it would dry out but it was fine . Like i said it was ok but i wanted it more like lox or the cured salmon but next time it was ok for my first time
  4. As a boat owner in salt water i am very familiar with e 10 gas it reeks havoc on engines and plastic gas tanks in storage like over winter. Its called phase separation and what that means is that the alcohol and gas separate and the alcohol being hydroscopic[ it means it attracts water from the air ] there is two theories one always leave the tank full in long storage and the other is to drain the tank empty. Both are right . Boat yards are notorious when pulling boats for winter storage to say oh you need your have your tanks empty and they will gladly empty them for you now guess were that gas goes. always use fresh gas and if you store ANY engine for a long period use the correct stor and go or the stuff from starbright thats made for e 10 gas.As a side note they want to introduce e15 which would be a total disaster for engines . Oh and the plastic gas tanks on older boats and tank the alcohol would melt them to a messy goo . it wound up in the engines too.
  5. i got back into being and practicing a catholic. a few years ago i was on a matt talbot retreat[ google him or pm me and you will understand where im coming from] and i went to confession and im sitting in front of the priest which was kinda strange to me and i said ,well attempted to say the act of contrition and i said man i forgot i havent been to confession since 1973 and after he got off the floor .I went into it and and to my suprize he was very understanding and i felt very at ease and been going to church when i can .Being italian my mom would come up with interesting ways to go without meat escarole and beans ,pasta and chickpeas and pasta fazool made with out meat.

  7. yeah i took my brother inlaw to pass his.They put him in a tub of some kind of gel and knocked him out and hit him with sound waves. when he got up the nurse hands him a screen and say when you go do it into the screen. he goes in the bathroom and SCREAMED i mean like loud and the nurse say yep it worked he passed his stone. When he came out it looked like sand and little pebbles in the screen. sorry paula i know too much info

  9. wow good luck!! I hope you get a big one . Dont forget to give some moose meat to your friends[ME!!!!lol].My friend went to Newfoundland and brought back some meat it is awesome!!! I made a chili with it and some marinaded steaks .Its much more tender than deer[ taste better too imho]. I think cause they dont move around as much as white tails they are more tender. As far as taste its moose meat, whitetail deer .and elk. Forget about mule deer and pronghorn. I had both and didnt like either.

  12. yeah everywhere they put casinos the locals got nothing . When they propose the casino the state and local goverments swear its the answer to all our problems. I remember when i was a kid and new york state lottery came out and they said oh its going to the schools no it didnt. In my area the resort world cut a deal with nyc and nys under the table. The construction jobs were from out of state and no unions [which is hypocritical cause there's a law that anyone doing business with the city has to be unionized oh they ignored that]. I talked to a cocktail waitress and said wow i cant get a cup of coffee and she say's yeah they're cutting back and dont want us to give drinks away that much. wow the money that place makes they are cheap like that. Oh and on rockaway blvd the only business that are making out are the pawn shops that popped up.
  13. hey guys, the show was awesome!!! Its huge but very expensive [the food i mean $3.50 for water $9 for a crab cake and the lines it was like they were giving it away.Did alot of walking and talking bought some stuff [turkey calls and a grunter[ i had one but the drunk took it. i'll explain in a bit]everyone was so nice that i talk too and the people that attended we all got along and it was tough bumping in to people constantly and wall to wall people but like i said everyone was respectful to each other and i had a nice exprience .Now NEVER EVER GO ANY WHEREWITH A DRUNK.It was shear hell!!! baby sitting a drunk all day. He was nasty and obnoxious [but i should have known from past experience with him]. It started @ 6am .he's bombed . I dont want to get into it any further but a word of advice DONT GO ANYWHERE WITH A DRUNK. I told my wife and my mom and they both said i dont want to hear it ,you know what he's like you should have known better.
  14. I live 4 blocks from resorts world casino in the city i went there 3xs. Go on youtube and search resort world casino you'll see why.DONT waste your time or money.Its a money making machine for the state thats all.Was hunting in monticello yrs ago walked in the racino on 17b put $20 in a machine and it sucked it in in 4 secs i walked right out and never returned. I love to play the machines and the catch word is play .All i want i some playtime for my money.All they do nowadays in these casinos is take your money and never give you back anything in comps.Resort world got rid of the buffet cause they wanted to go union now they all have queens burger and popeyes fried chicken[OOooo delicious greasy popeyes] Atlantic city yrs ago was so cool you didnt like one casino go to another and they would throw comps at you free rooms ,buffet and shows . And as far as monticello is concerned just take a ride down broadway and see how the racino boasted the economy bed sty is in better shape and it has no casino.Atlantic city didnt learn like vegas had to. They only worried about the casinos and board walk never fixed the beach or the area off the boardwalk and see where atlantic city is today.
  15. belo did you go to the hunting and fishing show in harrisburg? i went yesterday [saturday]. there was a load of of outfitters for elk hunts even the penn. game commission was there with pamphlets on elk in penn.There was outfitters and guides from every where colorado,montana[very very expensive ]utah. ect....And believe it or not some were very reasonable . I'LL post some that i took lititure from the show and outfitters i talk to[ im a social butterfly i talk to everybody]. the show in rockland cty coming up too but its nothing compared to harrisburg

  17. Hey anyone going .I'M going this saturday i'm not going to book a hunt or a fishing trip but i will be bring spending money. If you havent been there its like the disney world of hunting and fishing its HUGE.

Its so many emotions going on from complete boredom for sitting there for hours maybe, then totally focused if its a doe to see if its a good size.If its a buck MAKING SURE ITS HAS THREE ON ONE SIDE. Then i'm like Elmer fudd looking@ daffey duck seeing a roasted duck .I see roast, steaks chopmeat ,jerky. But when i get down and if i have to track my heart sinks and i say i know i hit that deer .Then when i see it its total excitement and then when get to the deer then it hits me i look it in the eye and kneel down and pet it, and look @ how beautiful it is . I say a prayer of thanks then get to work. the native americans had rituals too. When they killed a dear or a buffalo they would give it a drink of water [if you seen the movie about ishi played by that guy from dances with wolfs you know what i mean] in Germany the stick a branch in the animals mouth .its all about showing reverance to the animal and being humble.NOT like those people you see on t.v. dancing around and high fiveing and patting each other on the back.

  20. yeah man dont get discourged this is a learning process.If you look @ my post you'll see the same with me but i take waht works and i like and dont bother with the rest. the most important thing is cold everything the grinder parts in the freezer. the bowls and the meat in the freezer for an hour and after you grind and mix the meat[ oh yeah another thing im going to try add the spices before i grind them and see if its better]. When you grind you create heat and like you said the meat becomes goo and stick to everthing. Also what size casing you using it looks like 38-42 mm i use 28-32 mm hog casing
  21. update heres my sausages i made .In anther post i made jerky in my masterbuilt smoker. Im learning as i go along. One thing i found with the wood chips its the law of diminishing returns too much and they dont burn i emptied . i also learn you cant smoke with too high a temp the kielbasa came out awesome but the skin was alittle tough [ i go to greenpoint .bklyn for it so i know good kielbasa i work there]. But its fun to learn and i make the recipes my own like for instance i added pepperika to my sausage just alittle i like the red color.no flavor really. I couldnt believe all that meat and this all i wound up this.Oh yeah another think i found out when its cold out the unit has a hard time keeping the temp up so i had to play with that too On the unit there's a probe that you stick in the meat and it tells you the temp of the meat you need it any where from 152 deg to 165 depending on what you are smoking.
  22. i walked in the one in brooklyn and walked right out. The guy was arrogant and i felt like i was buying a used car from him.We're lucky in the city especially in brooklyn we have alot of chinese floor and cabinet places and other flooring outlets so i was choosie when i did my house over . And the quality varies .i bought floors from home depot. Pergo laminate flooring in my upstairs and i have no complaints
