Today I tried a Louisiana crispy brand and it had cornmeal in it. Which was a good crunch but thought it overtook the flavor of the fish a little too much. Would've been great on catfish though. Usually I use just a pancake mix and some Tony chacheres Creole seasoning. Or house of Autry seafood breading and Creole seasoning. I dont use an egg wash cause I like a lighter breading. And I am willing to risk cheap ketchup......but ketchup only! I had to check expiration on it I've had it so long.
