Horse, but it had a nice red wine sauce lots of root vegetables, so it could have been any red meat.

Zebra is my #1 favorite game meat as a steak. Its sweet like pork, texture like young beef. Interesting this is a real hot and cold topic in camps I've been in. I believe many Boer (whites) hate it for the racial connection, but they won't admit that. Has fat the color of chicken that is very sticky, and needs to be trimmed proper, one of the other reason some don't like it.

In Zimbabwe these kids sell field mice roasted whole on the side of the road at intersections;

For rodents I have had Capybara in Uraguay; worlds largest rodent. Was good and tasty, similar to woodchuck. Vegetarian so meat is clean.

Canine;Tried some backstrap from a Blackbacked Jackel......eh, chewy and gamey. similar to coyote in size and habits.

Feline; tried some Caracal, like a warm weather Lynx, would have better as Chinese stir fry if you tossed the Caracal and ate the pan.

Generally I don't like carnivore meats as they are full of parasites that herbivores don't have, I notice given the choice many even protein strapped locals don't like them either given a choice.

  They say the old Baylo's bar in Buffalo had the best roast beef ever & it was great , but they say it was horse meat it was good!    I have had woodchuck stew& roasted raccoon both were good but coon was a bit greasy, the woodchuck was like beef stew, not bad at all.

Mountain lion is supposed to be very good....I've been waiting for one of the locals that hang out at the bar in legion and claim to see and hear mountain lions on a regular basis to shoot one so I could try it,  but nobody has brought any in yet...

I would be interested in a Peru Guinea pig hunt.  They say they are very common down there and I hear they are quite tasty.   I don't particularly care for pork, and have zero interest in a wild boar hunt, but I bet the Guinea pigs would taste more like squirrel, which I really do like (much better than rabbit).   I also like the idea of the smaller targets for the greater challenge.  I suppose a .17 caliber pellet rifle would work well, but I would probably go with a crossbow and field tips.   I will have to look into it after retirement.  I am salivating a little right now looking at my daughter's pet one next to me in a cage as I type.

i call bs.   u put chicken and beef in a wok,  i'm not eating bird.

like the pic.  field mice must be like eating crunchy dry  sardines .   my family prefers pronghorn over the other western game.  if i remember correctly,  lewis and clark preferred dog over everything.

i think i know of a place for u.  iirc, there is a place in wetern mt that serves what u want.  it has a slogan,  pu$$y(mt lion) in the spring and balls(rocky mt oysters) in the fall. plan a spring turkey hunt and let us know.

This is crew cleaning out the stomach contents of buffalo in my avatar. Sorry for dark pic, had flash off and we were a long way from camp and hustling along and didn't get chance for more pics.

Here it is salted and drying at skinning shed. Supposed to be quite tasty sliced up and mixed with the corn meal( like grits) that is a staple eaten at most meals.

This is part of payday for hunting crew......they get paid cash, corn meal, cooking oil, and dried meat both in camp and to take home. In this case its a front quarter of my elephant thats cut up. They'll soak it in water later and then cook it either in stew or grilled. We ate some flank it grilled;  not my first time, its chewy but very good, beef like texture.

Buffalo waiting for the days processing.....ate the heart(hanging on tree), and part of a back strap; rest went to anti poaching patrol and camp staff. Put a solid through heart on first shot and no bruising, just like an arrow cut.

I'm a little partial to some nice grain fed black angus prime rib. I think I'll pass on the "cat, rat, dog, horse" meals and probably never really be missing out on much. Maybe some day if I am on the verge of starvation, I might be forced to get into those kinds of meals. But for now, I have earned a pretty good living over the years that has funded my retirement to the point where I don't have to forage for weird foods that I am unaccustomed to......lol.

Had guinea pig and alpaca in peru.  Had horse in Italy.  When I was in China I was actively looking for dog meat but couldn't find any.  The way it was explained to me it's basically the equivalent of China's rednecks.  Like opossum.  You know people eat it but if you walk around NYC asking for a restaurant that sells it, people will look at you funny.  You have to go to a specific regions in China to find dog meat.
