You guys mind if I jump in with a different question? Is there a way to "brush cut" three feet off the ground? I've seen sickle mowers cutting along the highway that would seem to be able to do that, but haven't found anything. My fields have become way too overgrown; I can't see anything. I'm thinking I will have to just brush cut and replant (or maybe brushcut with the three or hitch raised and let it regrow).

I saved the orange bags that the newspaper came in during wet weather. I slip it over my arm and poke my gloved fingers through. That helps keep mess down, and it's cheap. I found latex gloves that cover wrist. Those help, too.

Note, I am not yet clear on exactly what the temperature and humidity ranges need to be. I think it varies by type or size of sausage being cured.
