My wife makes eggplant parm once or twice a year and it's hands down one of my favorite meals.

I’ll never understand eggplant parm, nor order it nor eat it. Why would you replace chicken with eggplant? I understand those who swap in veal, but eggplant? Makes no sense

Hard to explain.....when cooked right it has an awesome unique taste. Also helps when you get it fresh near the end of summer.

Agreed. The softer texture is also a value add in my book.
And for the record [mention]Biz-R-OWorld [/mention] we had chicken parm too for the boys. It was good but not as good as the eggplant.

I like the sweet tang from the eggplant against the sauce and the melted cheese, along side a plate of pasta, it’s a winner dish when done right.  The breading needs to be a little crispy, it’s easy for the eggplant to get soggy.  

Crappyice, that parm looks awesome!

You should have made eggplant as a side...lol .....looks like those carrots came from the bottom of the veggie drawer.

I do like eggplant Parm I would say veal is not a swap in but an upgrade

My favorite slice of pizza. Place by me makes it with additional mushrooms, onion and yellow peppers! Looks great!
