Why would you replace chicken with eggplant? I understand those who swap in veal, but eggplant? Otto Posted December 11, 2020 Share Posted December 11, 2020 (edited) I like the sweet tang from the eggplant against the sauce and the melted cheese, along side a plate of pasta, it’s a winner dish when done right. The breading needs to be a little crispy, it’s easy for the eggplant to get soggy. Crappyice, that parm looks awesome!
