Agreed! I got that bottle as a gift and I think it’s become my favorite. So smooth and drinkable.

Smoked a venison roast over cherry wood until it hit 125* then  Pulled it off and rested it for a few hours in foil. Went into the fridge over night then i sliced it up. Beyond delicious, so much better than store bought roast beef. Making philly cheese steakes tonight with onions and shrooms.

I make a venison pastrami that is just beyond fantastic.

I've got a few venison roast vac sealed waiting for their time in the brine.  My project fridge died from C-19. Ok joking there. 

Just got a replacement fridge.  Hopefully next month I'll have time to make some vastrami. And if the temps are cool enough, some cold smoked cheese.

Resting for an hour before it hits the smoker. I have to do 4 more by next weekend as I'm cooking for mother in law 90th birthday  party. I don't usually  care about smoking but man I have alot to do . I'm supposed  to be up on the property disking and planting . Got to love when my lovely  wife  volunteered  me ... Guess I  was voluntold.:fool:

I know meat touching during smoking is blasphemy... but I bought 3 racks when I thought it was 2.  I’ll rotate them throughout the process, they’re not stacked, just overlapped.  Good bews to the additional neighbors who scored a dinner invite.
