johnplav
Brisket was a success. Celebrated my 36th birthday and my sister-in-laws 37th. Fed 12 adults and 6 rugrats. Also put a nice dent in a BDay gift! Edited August 2, 2020 by johnplav

SpacemanSpiff
Smoked a venison roast over cherry wood until it hit 125* then Pulled it off and rested it for a few hours in foil. Went into the fridge over night then i sliced it up. Beyond delicious, so much better than store bought roast beef. Making philly cheese steakes tonight with onions and shrooms.

SpacemanSpiff
Corned venison is delicious. I learned its best to inject the marinade into the meat so you don't get any grey streaks. Much more even product. Taking it to the next level (pastrami) is on my list.

My project fridge died from C-19. Ok joking there. Just got a replacement fridge. Hopefully next month I'll have time to make some vastrami. And if the temps are cool enough, some cold smoked cheese.

mowin
Cooking for a friend's son's wedding reception today. I did the mac-n-cheese and baked beans yesterday. Just have to reheat. Started the pit this morning around 5:30. 70lb Miss Piggy went on at 6:30.
johnplav
Nothing like what @mowin is up to today... but Iv got 3 racks of ribs in the fridge with a light rub on them. Planning to smoke 4-5 hours.
johnplav
I know meat touching during smoking is blasphemy... but I bought 3 racks when I thought it was 2. I’ll rotate them throughout the process, they’re not stacked, just overlapped. Good bews to the additional neighbors who scored a dinner invite.
mowin
Flipped Miss Piggy about a hr ago. Internal temp is about 155°. Eating around 3. My timing should be perfect. I'll reduce the pit temp to 175° and let it ride till serving time once she hits 165°.
