I’d bet anything the one you got at wegmans was select or no roll… not all prime rib is prime beef

Very true, but I've had many of the select cuts of prime rib and never had a tuff one. However the flavor of the prime is much better.

That is because all meat grading has to do with is the amount of fat at the 7th rib of the animal at the time of slaughter

All this high priced beef .Ouch!. I will stick to my grass raised ,grain finished beef at around $5.00/# burger and steaks included..

Lol I do this about once every year and a half.. we get a half beef for our family of 3 we usually pay between 3.50-4 hanging weight.

Besides certain cuts for Korean bbq I couldn’t tell
You the last time I purchased beef in a store

Same here.  Good friend of mine raises beef. I usually buy it off of him, except for whole brisket. I usually cook 8-10 a yr and he can't supply that many of them.

Yes, he basically signed up for this season when he picked up his beef last yr. He usually has 3 butchered every yr. Staggers them a couple months apart.  If I remember correctly, the shop he uses isn't taking any new clients at this time. Repeat customers only.

Prime is Prime and is hard to beat. 20$ lb is about average. I've had some terrific Angus Beef rib roast from my Local Hannaford for around 10$ lb.

Yes prime is prime but what most places call prime rib is not prime beef.

However this was
