Care to share the meatball recipe?

Grandmas recipe and measurement- Pound of ground...handful of 4C breadcrumb, a “good” handful of grated cheese, 1 egg, dry oregano, onion, garlic, red pepper flakes...mix and pan fry in oil on all sides and throw in sauce to finish.

anyone ever post venison Parm? A few of my Italian friends use venison like chicken and bread it like a cutlet with sauce and mozzarella

I’ve never done it parm style but I have certainly breaded and friend version cutlets. I usually make Jager schnitzel

I just did yesterday.

Cutlets pounded thin - breaded, fried, sauced with mozz under the broiler.

I also like the same cutlets with capers, red cabbage chopped hard boiled eggs and spaetzel ... haven’t made that in years but may be coming soon
