Tough? No, not at all. The backstrap melted in your mouth. A shoulder cut has a lot of connective tissue so it’s very well suited for a slow braise. I’ll say that axis deer is as good as the best whitetail I’ve had, but not better. (To be clear, there isn’t much that beats the best whitetail I’ve had)

Hurricane Henri flooded my air fryer with oil but we gave it a shot…
This was only supposed to be a fries night to accompany some burgers but the boys got frisky

Great spot.  The ribs and smoked sausage are also really good. 

Last year food Network voted them best ribs in NY!
