What's for dinner tonight?

Not dinner yet but I bought a half cow (440 pound) at $3.55 a pound. I highly recommend this place (Google pine plains butcher shop). I assume beef prices are going to skyrocket so I went big.
Very easy to work with and the best ground beef I've had around here. 
The butcher even gave me a few extras Hanger steak, heart and some sausage. 
 
If anyone wants to verify the butcher pm me and I will send the info.

Interesting, I’ve done half’s a few times that is a good price. Most of mine have come from Sullivan county.

I'm still working on the half beef we bought in fall. My friends hooked me up $3 lb. Hamburger went fast now if I need burger I just grind up a roast or a tougher cut of steak.

These guys supply Adam's Fair Acre farms which I didn't know until I asked about his hat. I thought is was super cheap as well not sure why.

He text me a picture of the price sheet with available cuts and how thick. Like I said I was super impressed. Very clean butcher shop as well.

For this recipe, the chef pounded the rabbit loins into thin schnitzels and then rolled them up and pan fried. It was tasty - very moist and tender. I'm going to try to replicate this with the Quebecois rabbit in my freezer that I shot last fall.

Yes, a couple of times, but these aren’t any of the fish I caught, which were few and far between.  Just too busy this year to make many trips.

It's a short season too and a lot involved to bring all that gear and setup. Gonna have to get you some walleye bank this summer!

I finished up the last of our vacuum-sealed St Lawrence river largemouth bass tonight, and my wife and daughter had Niagara river smallmouth.  We still have plenty of that left in the freezer.  I will have the leftovers for lunch tomorrow.  
 

After that, my next fish will be Adirondack smallmouth (not recommended for women and children, just like St Lawrence largemouth).   Upper Niagara smallmouth is supposedly safer  for them to eat.
 

 My wife baked it in the oven and had asparagus as a side.  It was very good.
